5. Best Corn Dip Ever

Mexican Corn Dip with corn chips

This corn dip is a crowd-pleaser! Whenever we bring food to work, my colleagues ask for this. And my friends ask me to make it for every party!

I make the recipe just like it says, except I use two cans of Mexican or Southwest-style corn and one can of white and yellow mixed corn. Don’t forget to drain your corn! I leave out the green onions. And I always add a tablespoonful of chili powder and a dash of cayenne.

I have switched out the cheddar for queso fresco or cotija cheese to make more of a street corn situation, which was delicious.
I’ve also added onion, extra jalapenos, and cilantro at times, and that is super tasty!

Serve cold with corn chips or tortilla chips!

4. Easiest-Ever Homemade Marshmallows

I’ve made these homemade marshmallows many times, and they always turn out amazing!

Marshmallows can be hard to make at home, and some recipes require precise temperature management, but this one is forgiving!

Just make sure to whip them up thick so they’ll hold their shape and work quickly to get them into the pan once they begin to cool.

Use a sharp knife to cut them. I use a square pan so that the corner marshmallows turn out looking like the rest.

The marshmallows are yummy by themselves but are also delicious dipped in chocolate!

I love to give these as Christmas gifts! Or they’re super cute wrapped up with graham crackers and chocolate for little giftable s’mores kits or favors. I also made them for a hot chocolate bar, which was adorable!

3. Rosemary Cheddar Irish Soda Bread to Bake Every St. Patrick's Day

irish soda bread

Y’all, this bread is so good. I have to make it every single year to go with our corned beef and cabbage.

Serve it warm with softened salted butter! (I like to buy Irish butter to be festive!)

It’s best served fresh.

I was nervous about cooking it all the way through to the middle the first time I made it, but I didn’t have a problem. I take it out once the top browns.

Using an Airbake cookie sheet really helps get a crisp bottom!

This is my go-to pimento cheese recipe!

I don’t change a thing! Of course, you can make a sandwich, but it is so good on Ritz crackers.

I was afraid of the grated onion the first time I made this, but you shouldn’t be! It is delicious!

1. Cinnamon Rolls to Die For

cinnamon roll

These cinnamon rolls are so, so good! They’re the best I’ve ever had! I found this recipe on Pinterest years ago and still make it. It was originally posted in 2014. They’re supposed to be the recipe the old Main Street Bakery at Disney World used before it was a Starbucks.

They take a while to make, and the recipe makes a lot of rolls. Make sure you’ve got a free afternoon and several hungry mouths before starting these!

I make these around the holidays when have some extra time off work and family in town. They make great gifts as well!

If you make the cinnamon rolls just like the recipe, you get GIANT rolls- as big as your head rolls. Sometimes I roll the dough out, then cut it in half lengthwise to make regular-sized rolls.

I tried making these ahead and keeping them in the fridge raw to bake later, and that didn’t work very well. If you want to save some for later, I’d bake them all at once but leave the icing off. That way you can pop them in the oven or microwave for a second without melting your icing off.

Use a really sharp, serrated knife to slice the rolls, or you’ll have a mess. I use a bread knife.

I usually double the icing recipe because I like mine really sweet!

I save the little tin containers that frozen rolls come in to bake these in. I don’t have enough cake pans, and these are the perfect size.

A pastry mat is super helpful to put your dough on.

I brush melted butter onto the dough then sprinkle the cinnamon and sugar on top.
